INGREDIENTS
200 g butter or margarine
200 g sugar
4 eggs
200 g wheat flour
1.5 teaspoon of baking powder or baking soda
4-6 green apples
Cinnamon and sugar to add on the apples
HOW TO MAKE IT
Mix the butter and sugar until it is smooth and quite white. Add the eggs one by one and mix until it is smooth again. Sift the flour in while mixing and add the baking soda to the last batch of flour.
The apples must be peeled and the center taken out. Then cut the apples in half moon pieces.
Coat a cake dish with butter and flour, add half the mix and put apples on it. Sprinkle cinnamon and sugar on top. The add the rest of the mix and a new layer of apples with a generous sprinkle of cinnamon and sugar.
Place it in the middle of a preheated oven and bake for 40 minutes at 175 Celsius. If using a gas oven, try baking it on a low gas mark and just let it bake a little longer. Better to wait than to burn it. Check with a big needle or a thin knife if it is ready.
I got this recipe from my mom and most people that have tasted the cake have asked for the recipe. One group of people that got to taste this cake was one of the classes Eni was teaching last year. You can see some of the pictures from this in the gallery.
