There is something about Brazil that makes me want to make food. Maybe it is the huge variety of fresh fruits, vegetables etc. that you can find in different markets all over. I simply love strolling around a feira, an open air market, where farmers and others from the surrounding areas come to sell their produce.
There also seem to be a good number of shops that sell pots, pans and different equipments for the kitchen. So I went looking for some small dishes for making Crème Brûlée and other types of pudding. One of the shops had five left and they seemed to be perfect size, so I bought all of them.
The first thing I tried was a coconut pudding and it turned out just perfect! After that I had to give Crème Brûlée a go and even that one was just perfect. I love cooking!
The coconut pudding is so quick and easy that I think you should actually try it. Here is the recipe:
INGREDIENTS
3 eggs
2 egg yolks
4 dl coconut milk
100 g sugar
1 ts vanilla sugar
4 tbs chopped pistachio nuts as decoration
HOW TO MAKE IT
Preheat your oven to 180 Celcius.
Mix the eggs, egg yolks, sugar and vanilla sugar until the sugar has dissolved totally. Do not beat it so you get a lot of air in it.
Pour into small porcelain dishes. This recipe should fill 4 dishes that can hold 1,5 dl. Put the dishes in a pan in the oven and fill hot water in the pan. Bake for about 20 minutes or until the pudding is firm enough. Be careful so the water do not boil. The pudding would then get dry and have bubbles inside.
Serve hot or cold with the chopped pistachio nuts on top.
Another tip: You might have to guard the puddings as they cool down. This dessert is delicious and tempting to just grab and eat so it could very well be gone if you turn your back!
