Three portions of Crème Brûlée. One is missing!There is something about Brazil that makes me want to make food. Maybe it is the huge variety of fresh fruits, vegetables etc. that you can find in different markets all over. I simply love strolling around a feira, an open air market, where farmers and others from the surrounding areas come to sell their produce.

There also seem to be a good number of shops that sell pots, pans and different equipments for the kitchen. So I went looking for some small dishes for making Crème Brûlée and other types of pudding. One of the shops had five left and they seemed to be perfect size, so I bought all of them.

The first thing I tried was a coconut pudding and it turned out just perfect! After that I had to give Crème Brûlée a go and even that one was just perfect. I love cooking!

The coconut pudding is so quick and easy that I think you should actually try it. Here is the recipe:

INGREDIENTS

3 eggs
2 egg yolks
4 dl coconut milk
100 g sugar
1 ts vanilla sugar
4 tbs chopped pistachio nuts as decoration

HOW TO MAKE IT

Preheat your oven to 180 Celcius.

Mix the eggs, egg yolks, sugar and vanilla sugar until the sugar has dissolved totally. Do not beat it so you get a lot of air in it.

<span class=Pour into small porcelain dishes. This recipe should fill 4 dishes that can hold 1,5 dl. Put the dishes in a pan in the oven and fill hot water in the pan. Bake for about 20 minutes or until the pudding is firm enough. Be careful so the water do not boil. The pudding would then get dry and have bubbles inside.

Serve hot or cold with the chopped pistachio nuts on top.


Another tip: You might have to guard the puddings as they cool down. This dessert is delicious and tempting to just grab and eat so it could very well be gone if you turn your back!

resized_<span class=Something very special happened Thursday, March 2nd this year in the morning. Oskar was born, son of Grete and Kjell Arne.

This was the culmination of a lot of prayers and many years of waiting. And we would like to express our congratulations to the happy parents through this blog as well as on their page. Their blog is in Norwegian, but there are a lot of nice pictures of Oskar, his parents and relatives.

Oskar’s entry into this world was not an easy one. He was born through a C-section and things were looking good. Luckily, the nurse checked his blood sugar after a very short time and discovered that it was 0.3-0.4! It should be 10 times higher than this. He soon got cramps and stopped breathing. He got help to breathe and was moved to intensive care where he remained for a few days while he was treated with antibiotics and medicine to reduce cramps.

Hours later and a lot of prayers later, Oskar was gaining strength steadily. Even the staff at the intensive care could not explain the rapid recovery.

Oskar is now home with Grete and Kjell Arne. He cries a lot sometimes and the parents are discovering the "smelly" side of having kids. But they are savoring every moment and updating the blog as often as they can.

We want to wish Oskar Mathias Thomassen and his parents all the best and on behalf of everyone in Brazil - Congratulations!

Finished Apple CakeINGREDIENTS

200 g butter or margarine
200 g sugar
4 eggs
200 g wheat flour
1.5 teaspoon of baking powder or baking soda
4-6 green apples
Cinnamon and sugar to add on the apples



HOW TO MAKE IT

Mix the butter and sugar until it is smooth and quite white. Add the eggs one by one and mix until it is smooth again. Sift the flour in while mixing and add the baking soda to the last batch of flour.

The apples must be peeled and the center taken out. Then cut the apples in half moon pieces.

Put on applesCoat a cake dish with butter and flour, add half the mix and put apples on it. Sprinkle cinnamon and sugar on top. The add the rest of the mix and a new layer of apples with a generous sprinkle of cinnamon and sugar.

Place it in the middle of a preheated oven and bake for 40 minutes at 175 Celsius. If using a gas oven, try baking it on a low gas mark and just let it bake a little longer. Better to wait than to burn it. Check with a big needle or a thin knife if it is ready.

I got this recipe from my mom and most people that have tasted the cake have asked for the recipe. One group of people that got to taste this cake was one of the classes Eni was teaching last year. You can see some of the pictures from this in the gallery.

Salem.jpgYes, it is true. We are getting married!

If everything goes well, we will have a small ceremony in Skudeneshavn, Norway, August 5th. The place will be Pinsemenigheten Salem, and the pastor there is Viggo Abrahamsen. He himself is married to a brasileira and he is fluent in Portuguese so this was an obvious choice.

The party will be small - if you can ever get that in our family. If the whole Wisnæs family brings their spouses and kids, the party will be quite big…

We will also have a small party in Brazil so our friends and family there get the chance to celebrate with us. As far as we know now, none of them will go to Norway for the event there.

A lot of things need to be in order before the wedding. And since there is a rule in Norway that say that papers can be maximum 3 months old, we have to start getting all papers ready now. There will be a separate blogentry about this. It could be ok to document everything so others can benefit from it.

We are looking forward to this and both are a bit nervous as well. Two families from almost opposite sides of the world. We hope and pray that our families will be able to meet some day, but right now it is not looking too good.

One thing need to be mentioned. It seems like we are surrounded by positive and friendly people! Something like this takes a bit of coordination, but so far everyone we have talked to has been very positive. We are very grateful for this and hope that the trend will continue!

Eni_Svein.jpg Welcome to the first post in what I hope will be permanent website for us.

I have spent some time trying to adjust the design of this site to something I like. And with the picture slideshow at the top, I think I am satisfied.

Just a few words about the technical part of this website. The system I am using is WordPress. The theme is a modified version of Connections. And the plug-in that makes the slideshow at the top is FlashFader. In addition, I have installed Plogger gallery to handle our pictures.

Right now I am living in Norway, but the plan is to move to Brazil as soon as possible. So everything I do now is with that thought in the back of my head. I am also thinking a lot about how to get the few things I have to Brazil without paying too much for it. And what will I do for a living when I am finally there. It is a big decision to make a move like this and a little bit scary. The only thing I can do is leave it in Gods hands and believe that everything will be ok.

I am really looking forward to move there and to finally have a family! And to have a winter without snow for the first time in my life…

But before that happens, Eni and Tete are going to come to Norway. So this is our first challenge. More about that later.
